Grilled Chicken & Veggie Skewers

Ingredients:

  • 2 chicken breasts, cubed

  • 1 zucchini, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, sliced

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

Instructions:

  1. Preheat a grill or grill pan over medium-high heat.

  2. Thread the chicken, zucchini, peppers, and onion onto skewers.

  3. In a small bowl, mix together the olive oil, oregano, salt, and pepper.

  4. Brush the skewers with the oil mixture.

  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
