Mixed Berry Salad

Macros (per serving, assuming 2 servings): Calories: 218 Protein: 6g Fat: 16g Carbs: 16g Fibre: 6g Sugar: 7g


Ingredients

  • 4 cups baby spinach

  • 1/2 cup blueberries

  • 1/2 cup raspberries

  • 1/2 cup sliced strawberries

  • 1/4 cup sliced almonds

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the baby spinach, blueberries, raspberries, sliced strawberries, sliced almonds, and crumbled feta cheese.

  2. In a separate mixing bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  3. Pour the dressing over the spinach and berry mixture and toss to combine.
